Shrimp Linguini
This is oh so good, a family favorite, and a great way to get a bit of seafood into your diet.
1/2 lb linguini noodles
4 T butter
2 T olive oil
2 cloves of garlic, minced
Pinch of red pepper flakes
1 lb shrimp, peeled and deveined
salt and pepper
1/2 C chicken broth
1 T lemon juice
1/8 C Parmesan cheese
Parsley to taste
Cook pasta. In a skillet, melt 2 T butter in 2 T olive oil over med-high heat. Saute garlic and red pepper flakes 3-4 minutes. Season shrimp with salt and pepper; add to pan and cook until pink, 2-3 minutes. Add broth and lemon juice to skillet and bring to a boil. Add 2 T butter and parsley. Stir in the cooked pasta. Add Parmesan cheese and season with salt and pepper and parsley. Toss and serve warm. Enjoy!
